Don't be confused by the "ribs" in the name of this product — this is a boneless cut that comes from the pig's shoulder. Country Style Ribs are naturally on the tough side, which means they do best when smoked, braised, or a combination of the two. Use in place of St. Louis Pork Steaks in this recipe.

Country Style Ribs aren't ribs at all. Cut from the shoulder of a hog, these contain lots of connective tissue that breaks down into a luscious final product.

Generously season these steaks with salt and pepper then grill for about 10 minutes, flipping halfway through. Put them in a pan over medium heat and add a mixture of equal parts beer and barbecue sauce until submerged. Cook for at least two hours.
